Great pasta dish for a weeknight dinner!

  1. Cook pasta according to can instructions; cool and set aside.
  2. While pasta is cooking, place a large sauté pan on low heat and add 1 tbsp. butter, garlic, onions, and sausage. Sweat together, but do not brown.
  3. If desired, add white wine and cook until liquid is reduced by half.
  4. Add chicken stock, peppers, Italian seasoning, and mushrooms and bring to a simmer for 2 minutes.
  5. Sprinkle in sauce mix while whisking and allow to simmer for 1 minute.
  6. Fold in spinach, tomatoes, parmesan, seasoning, and pasta. Bring to a simmer, then turn off heat.
  7. Fold in remaining 1 tablespoon butter to finish.

Yield: 4 cups
