  1. Reconstitute roast beef by placing it in a large bowl and covering with 1 cup of water. Allow to rest for 5 minutes.
  2. Pre-measure the ingredients and place all veggies and seasonings in one dish, all other ingredients separately.
  3. In a medium saucepan brown the roast beef with the olive oil. Add the vegetable mixture and stir to incorporate.
  4. Add red wine to deglaze and reduce by half. Add the water and bring to a simmer.
  5. Slowly add the tomato powder while stirring to incorporate evenly. Add the Balsamic vinegar.
  6. Simmer sauce for 20 minutes.
  7. Fold in the fresh basil and cheese and allow to rest for 5 more minutes before serving.

Yield: 6 cups
