  • 1 c. water
  • 1/2 c. Cane Sugar
  • 1/2 tsp. Iodized Salt
  • 2 tbsp. cornstarch
  • 3 tbsp. lemon juice (optional)
  • 1 pkg. strawberry gelatin
  • 8 oz. cream cheese
  • 3 c. Whole Strawberries - Freeze Dried (rehydrated)


  • 1 c. White Flour (All Purpose Unbleached Flour)
  • 1/2 c. butter
  • 3 tbsp. Powdered Sugar
  • 1 tsp. vanilla extract

  1. In a small saucepan boil water, sugar, salt, cornstarch, lemon juice, and gelatin. Stir continuously until sugar is dissolved. Set aside.
  2. In a large bowl combine all crust ingredients and mix well. Press crust into a greased 9-inch pie pan.
  3. Prick crust all over with fork and bake for 8 minutes at 350F. Cool crust in fridge.
  4. Spread cream cheese onto bottom of cooled pie crust. Spread rehydrated strawberries evenly over cream cheese, and pour gelatin mixture over strawberries.
  5. Chill in refrigerator for 1 hour or until gelatin mixture is firm.
