Taco salad is a fun, easy meal option for any day of the week.

  • 1/2 c. Taco TVP
  • 1/4 c. Mixed Bell Peppers
  • 1/4 c. Chopped Onions- Dehydrated
  • 2 clv. garlic, minced
  • 2 tbsp. cilantro, chopped
  • 1 tbsp. lime juice
  • 1/4 tsp. cumin
  • 1/4 tsp. chili powder
  • 1/4 tsp. Iodized Salt
  • 7 1/2 oz. lettuce, shredded
  • 1/2 c. tortilla chips
  • 3/4 c. THRIVE Sour Cream PowderTHRIVE Sour Cream Powder (prepared and seasoned to taste)
  • 1/2 c. salsa

  1. In a medium-size bowl, cover TVP, peppers, and onion with hot water and set aside for 5–10 minutes. Drain excess water by pushing through a strainer.
  2. Sauté garlic, TVP, peppers, and onion mixture in a frying pan with a little butter.
  3. Fold in cilantro, lime juice, and seasonings to finish. Taste and adjust if needed.
  4. Top lettuce with the taco mix, tortilla chips, sour cream, and salsa.

Yield: 2 cups
