  • 1/2 c. Cane Sugar
  • 3/4 c. water
  • 2 tbsp. light corn syrup
  • 1/3 c. heavy cream

  1. Combine sugar, water, and corn syrup in a heavy medium-size saucepan, being careful not to let ingredients splash up onto the sides of the pan.
  2. Stir over medium heat until sugar dissolves. Increase heat and boil without stirring until mixture turns a deep amber color (about 10 minutes), occasionally swirling pan and brushing down the sides with a wet pastry brush.
  3. After about ten minutes, remove pan from heat.
  4. Carefully add cream to heated mixture. Stir sauce over low heat, simmering until any caramel bits dissolve and sauce is smooth.
