Ingredients:

  • 3 sli. Bacon, cut thick
  • 3 tbsp. THRIVE Carrot DicesTHRIVE Carrot Dices
  • 3 tbsp. THRIVE Chopped Onions- DehydratedTHRIVE Chopped Onions- Dehydrated
  • 3 tbsp. THRIVE Celery - Freeze DriedTHRIVE Celery - Freeze Dried
  • 1 c. THRIVE Potato Dices - Freeze DriedTHRIVE Potato Dices - Freeze Dried
  • 2 1/2 tsp. Fresh garlic, minced
  • 2 1/2 tsp. Fresh shallots, minced
  • 1/3 c. Butter
  • 1 tsp. Thyme, dry
  • 3/4 tsp. THRIVE Iodized SaltTHRIVE Iodized Salt
  • 1/4 tsp. White pepper
  • 3/4 tsp. Old Bay seafood seasoning
  • 1/3 c. White Flour (All Purpose Unbleached Flour)
  • 3 c. Clam juice
  • 2 tsp. Clam base
  • 1 1/2 c. Chopped clams
  • 2 1/4 c. Heavy cream
  • 7 tbsp. THRIVE Instant MilkTHRIVE Instant Milk + 2 1/4 c. water
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. Red wine vinegar
  • 1 tbsp. Lemon juice
  • 1 tsp. Cholula hot sauce

Directions:

  1. In a skillet, dice the bacon into small pieces, brown it, and drain most of the grease.
  2. In a heavy-duty 3-quart saucepan, combine the carrots, onions, celery, potato, garlic, shallots, butter, browned bacon, and all the seasonings and sweat together until butter is completely melted.
  3. Add the flour and stir into ingredients to make the roux.
  4. Add the clam juice and clam base and stir well; cook about 3 minutes to thicken.
  5. Reduce heat and add the cream, then the remaining ingredients.

For best results, follow this timeline: 10 minutes for sweating/sautéing, 20 minutes for simmering on low, 10 minutes to rest and sit before serving.
