"Gimme Thrive" Cranberry Onion Bacon Jam

Fantastic with crackers or bread, this savory and sweet jam is a great appetizer for any occasion, but especially for the holidays. Serve over soft cream cheese or baked brie.

  • 6 oz. bacon
  • 4 c. THRIVE Onion Slices - Freeze Dried THRIVE Onion Slices - Freeze Dried
  • 1 c. water
  • 3 c. Sweetened Cranberries - Freeze Dried
  • 1 3/4 c. water
  • 1 1/2 tsp. salt
  • 1 pn. red pepper flakes
  • 3/4 c. sugar
  • 2 tbsp. Balsamic Vinegar
  • 1 1/4 c. cranberry juice cocktail

  1. In a heavy pan, cook the bacon until crisp, removing to paper towels to drain. Do not drain the fat from the pan.
  2. While bacon is cooking, combine the onions with the 1 cup of water in a bowl and combine the cranberries with the 1 3/4 cup water in another bowl. Stir well and allow to refresh.
  3. Add onions to the bacon fat in the pan and stir well. Add salt and red pepper flakes and cook for about 5 minutes, stirring frequently.
  4. Add the cranberries, bacon, sugar, and cranberry juice cocktail and stir. Bring to a simmer, cover, and cook for another 15-20 minutes, stirring occasionally.
  5. Remove from heat and add the balsamic vinegar. It's not ready to serve.
