  1. For the rice, in a small sauce pot add 2 1/2 cups of chicken stock and bring to a simmer. Add in 1 teaspoon of Chef's Choice Seasoning and the rice and bring to a simmer. Simmer for 3-4 minutes covered. Remove from heat and let rest for an additional 5 minutes.
  2. For the curry, in a medium skillet add the oil, garlic, and ginger and sweat until lightly browned.
  3. Add 1 1/2 cups of chicken stock, chicken, green chilies, cilantro, 1 tsp Chef's Choice Seasoning, and curry powder and bring to a simmer. Simmer for 2 minutes while stirring.
  4. Add in the coconut milk and lime juice and simmer for an additional 2 minutes.
  5. Mix the cornstarch with 2 tablespoons of cold chicken stock and slowly add into the curry sauce to thicken. Simmer for an additional minutes.
  6. Serve curry sauce over the rice.
