  1. Season each steak with Chef's choice seasoning blend and sear in a very hot skillet to caramelize the out side, but not cook it all the way through keeping it rare. Place on a baking sheet with a rack.
  2. In a food processor, add all the vegetables, cheese, bread crumbs seasonings and spices, and blend lightly to make small pieces or crumbs.
  3. In a saute pan sweat the garlic and butter together until lightly golden. Add in the vegetable crumb mixture and stir.
  4. Add in the water and stir well to combine and remove from the heat.
  5. Top each steak with a bout 1/4 tablespoon of dijon, place the topping on the top and press down to pack firm.
  6. Bake in 400 degree oven for about 7-9 minutes or until desired temperature and the top is lightly browned.
  7. You may need to broil the top to prevent over cooking of the steak.
