  1. In a 3 quart sauce pan, sweat the garlic and olive oil together.
  2. Add the vegetables to the pot and stir together.
  3. Add the water and the bouillon and stir well.
  4. Add all the seasonings and cover with a lid and simmer for about 10 minutes.
  5. Place the soup in a blender and blend smooth.
  6. Place back into the pot and add the cream and vinegar and bring to a simmer for an additional 5 minutes.
  7. Taste and adjust as needed.

Yield: 7 cups
