"Gimme Thrive" Buckeye Bites

  1. Preheat oven to 350 degrees. Spray a mini muffin pan with nonstick cooking spray.
  2. Mix brownie mix and hot water until combined.
  3. BakeUsing a 1.25"-diameter cookie scoop, place level scoopfuls of brownie mix into muffin tin wells.
  4. Bake for 16-18 minutes.
  5. While brownies are baking, mix together the powdered sugar and peanut butter. Form into scant 1" balls.
  6. Immediately upon removing muffin tin from oven, use a melon baller to make depressions in each brownie bite. Press a peanut butter ball into each depression.
  7. Using a small spoon, gently loosen the brownie bites around the edges and scoop out onto cooling rack.
  8. Using a microwave-safe bowl, place milk chocolate in the microwave for 30 second increments, stirring well after each, until melted and smooth.
  9. Pour about a half tablespoon of melted milk chocolate onto each brownie bite. Allow the chocolate to set before serving.
